Optimizing: Why Do We Need Sampling Education?

For decades, the challenges in the area of sanitary sampling have remained a field hidden in the dark and ignored by too many, including regulatory bodies, test labs, hygienic design test institutes, educators and others involved with sanitary process quality control and food safety.
Nevertheless, problems with sanitary sampling are extremely common. Most processors have had experiences with inconsistent and unreliable test results due to cross-contamination - or remained a mystery and inexplicable. Not to mention the many bad samples that are not identified and go unnoticed. In fact, sampling is a quite complex and sensitive area with unreliable samples leading to dangerous and expensive conclusions such as discarding good product or – even worse - releasing bad.

Now, you would probably agree that the concept of sampling sounds quite simple and easy to understand: You extract a small portion from the larger quantity in the process line and use that as a representative reflection to be tested in the lab. Indeed, it does sound easy and perhaps this is the reason why sampling equipment and procedures are so often ignored and – unlike processing or lab equipment – are not submitted to the same attention to detail and regulation. Or maybe it is quite simply because the sampling device really is considered to be a piece of lab equipment that just happens to be installed in the production area. The missing link between process and lab; perhaps we should ask: out of sight, out of mind?
